Hubby's Chicken Enchiladas

Ingredients ( 10 )
- 4 Lg. chicken breast halves parboiled and cut into chunks
- 1 can lg. black olives, sliced into rings (save some for garnish)
- 1 Sm. can whole green chilies, chopped
- 1 Med. white onion, chopped fine
- 1 16oz. container of sour cream
- 1 8oz brick sharp cheddar, grated
- 1 8oz brick Monterey Jack, grated (reserve some of both cheeses for garnish)
- 2 pkgs. med. sized tortillas
- Salt & pepper to taste
- 1 jar medium heat salsa
Directions

In large bowl combine first 7 ingredients and season with salt & pepper to taste.
In med. pan over med heat, warm through each tortilla, stacking them for filing (this will make them much more plyable than cold tortillas.)
Place heaping tablespoon of mixture just off center and roll snug. Line them up close together on sprayed cookie sheet.
Top with reserved cheese and olives.
Place in preheated 350 degree oven for appox. 20. minutes or untill edges are golden.
Serve with salsa laced on top.
This will be a family favorite for years to come. (Hint: re-heat in toaster oven, not in microwave!)
