This is a great exotic dish using the african horned melon or Kiwano. Many people think of this as a fruit, however, it is actually a vegetable. Knowing this, I cooked it's strange gelatinis insides with a combination of rosemary,basil,and crushed red pepper. I then combine the chiken and roasted green beans to obsorb the moistere and simmer it alltogether. When done, I top it off with a roasted butternut squash on the side to create a taste of africa since butternut sqash is grown in south afica as well. It is my very own idea and i just want to get this out to people to try for an all exotic experience.

Ingredients ( 3-6 )

  • African horned melon
  • boneless skinless chicken
  • rosemary, basil,crushed red pepper
  • roasted green beans
  • a side dish of baked butternut squash with a combination of cinnimon maple syrup or honey on it.

Directions

  1. Combine roasted chicken and green beans in a pan. Gut out a ripe melon and add it to the chicken and throw in a quarter of a handfull of each herb(basil ,pepper ,and rosemary turn the heat down to 5 and cover for 20 minutes.
