This is a great exotic dish using the african horned melon or Kiwano. Many people think of this as a fruit, however, it is actually a vegetable. Knowing this, I cooked it's strange gelatinis insides with a combination of rosemary, basil, and crushed red pepper. I then combine the chiken and roasted green beans to obsorb the moistere and simmer it alltogether. When done, I top it off with a roasted butternut squash on the side to create a taste of africa since butternut sqash is grown in south afica as well. It is my very own idea and i just want to get this out to people to try for an all exotic experience.
