Chilled coconut chicken Hors D’oeuvres

Ingredients ( 4 ½ dozen )

  • 1 (8 ounce) package cream cheese
  • 3 tablespoons mayonnaise
  • 12 oz Papa Felico™ Fully Cooked Chicken Breast Strips
  • 1½ cups finely chopped almonds, toasted
  • 3 tablespoons chutney, chopped
  • 2 teaspoon curry powder
  • 1 teaspoon salt
  • 2 cups flaked coconut

Directions

  1. Grill chicken; then finely chop. Beat cream cheese and mayonnaise until light and fluffy. Stir in next 5 ingredients, mixing well. Shape mixture into 1-inch balls; roll in coconut. Chill several hours.
