Ingredients ( 1 )

  • 1 porterhouse steak
  • salt and pepper
  • extra virgin olive oil
  • Butter
  • Chives (chopped)

Directions

  1. On both sides of the steak season liberally with salt and pepper.
  2. Drizzle olive oil on both sides.
  3. Put the steak on the hottest part of the grill, turning 45 degress after 1 minute to achieve crossshatch grill marks. Flip after the second minute and repeat on the other side. After the second minute on this side move steak over to less hot part of the grill for about 7 minutes. Make sure the tenderloin part of the steak is farthest from the heat.
  4. While you are waiting for the steak to finish, heat a small saucepan and add a half a stick of butter, a tbs. of olive oil and chopped chives.
  5. After the steak is done remove from grill and let sit covered for 5 minutes. Finish by drizzling the melted chive butter over the steak. Serve with whatever sides you wish!
