Ingredients ( makes 4 )

  • 1 lg. yellow bell pepper, chopped
  • 1 medium onion, chopped
  • 1/2 tomato, chopped
  • 2 tsp olive oil
  • 6 oz fusilli pasta
  • 1/4 c. ricotta cheese
  • 2 tbsp minced parsley
  • parmesan cheese

Directions

  1. 1. Combine 3/4 c. water, bell pepper, onion, tomato, oil, S and P. Cover, cook, stir frequently and adding 1/4 c. water at a time as needed, 15-18 minutes, until tender. 2. Boil fusilli 3. Blend pepper mixture and ricotta cheese till smooth. Add to fusilli, sprinkle with parsley and parmesan
