Ingredients ( 4 )

  • 1 tablespoon vegetable oil, divided
  • 1/2 pound boneless chicken breast cut into bite-sized pieces
  • 1 cup peeled chopped Gala apples
  • 3/4 cup chopped onion
  • 1/2 cup chopped carrot
  • 1/2 cup chopped celery
  • 1/2 cup chopped red bell pepper
  • 2 tablespoons flour
  • 1 tablespoon curry powder
  • 1 teaspoon ground ginger
  • 1/2 teaspoon crushed red pepper
  • 1/2 teaspoon of salt
  • 2 cans of chicken broth
  • 1/3 cup mango chutney
  • 1/4 tomato paste
  • Chopped fresh parsley

Directions

  1. Heat 1 teaspoon of oil in a Dutch oven over medium high heat. Add chicken, and saute' 3 minutes. Remove from pan, set aside
