Vegetarian, healthy comfort food. A rich beans-and-tomato-based sauce for pasta or rice. Not the quickest recipe, but very easy. The longer and slower you can let everything cook, the better.

Ingredients ( 4 )

  • Chick peas (two 13-oz. cans, drained and washed)
  • Chopped tomatoes (one 23-oz. can)
  • Two medium-to-large onions
  • Olive oil
  • Spinach or greens (optional)
  • Grated hard cheese
  • Pasta or rice (about one pound)

Directions

  1. Finely chop the onion and fry it over medium heat in the oil.
  2. When the onions are translucent (not browned), add the chick peas. Stir frequently to keep the beans from sticking or burning.
  3. After about seven to ten minutes, add the tomatoes.
  4. Add the greens, if you have them.
  5. Allow the mixture to simmer on medium-low heat for as long as possible.
  6. Serve over pasta or rice, and add grated hard cheese to taste.
