This was invented in my kitchen on a whim, and I love how it turned out. I don't remember exactly what I did; some of these are guesswork. But I'm sure it'll turn out generally the same!

Ingredients ( 8-12 )

  • 2 cups organic vegetable broth
  • 1 can diced tomatoes
  • 1 can tomato sauce
  • 1 can of white beans
  • 1/4 cup of dried lentils, washed, drained
  • 1 red bell pepper, finely chopped
  • 1 medium onion, finely chopped
  • 2 cups of kale, roughly chopped
  • 5 cloves of garlic, minced
  • 2 Tbsp of Italian seasoning
  • Pinch of sugar
  • Dash of hot sauce
  • 3 Tbsp of olive oil
  • Parmesan cheese for topping (optional)

Directions

  1. Finely chop red pepper and onion. Roughly chop kale
  2. Heat oil on medium heat in the bottom of a stock pot. When it starts to smoke, throw in onions and peppers and sautee.
  3. After about 3 min, throw in garlic and sautee for about 30 secs before pouring in vegetable broth, tomatoes, and tomato sauce.
  4. Bring to a boil. Add in the rest of the ingredients.
  5. After about 10 minutes, turn the heat to low and cover the pot. Simmer for anywhere from 1-3 hours.
  6. Serve topped with Parmesan cheese.
