Kale and Red Pepper Minestrone
This was invented in my kitchen on a whim, and I love how it turned out. I don't remember exactly what I did; some of these are guesswork. But I'm sure it'll turn out generally the same!

Ingredients ( 8-12 )
- 2 cups organic vegetable broth
- 1 can diced tomatoes
- 1 can tomato sauce
- 1 can of white beans
- 1/4 cup of dried lentils, washed, drained
- 1 red bell pepper, finely chopped
- 1 medium onion, finely chopped
- 2 cups of kale, roughly chopped
- 5 cloves of garlic, minced
- 2 Tbsp of Italian seasoning
- Pinch of sugar
- Dash of hot sauce
- 3 Tbsp of olive oil
- Parmesan cheese for topping (optional)
Directions

Finely chop red pepper and onion. Roughly chop kale

Heat oil on medium heat in the bottom of a stock pot. When it starts to smoke, throw in onions and peppers and sautee.

After about 3 min, throw in garlic and sautee for about 30 secs before pouring in vegetable broth, tomatoes, and tomato sauce.

Bring to a boil. Add in the rest of the ingredients.

After about 10 minutes, turn the heat to low and cover the pot. Simmer for anywhere from 1-3 hours.

Serve topped with Parmesan cheese.
