Fantastic way to use broccoli stalks. Lovely flavor and gorgeous color.

Ingredients ( 2 to 3 )

  • 1 or 2 pats butter
  • 1 medium onion, chopped (I prefer white, but I have tried all kinds, and they've all worked well.)
  • 2 cloves garlic, smashed
  • 2 or 3 broccoli stalks, chopped
  • 1 to 2 tablespoons of your favorite curry powder mix or 1 tablespoon turmeric 1 teaspoon coriander 1 cumin
  • 1 to 2 cups stock of your choice (I prefer chicken.)
  • 1/4 cup coconut milk
  • 1/4 cup creme fraiche
  • 1/4 cup milk (I prefer skim.)

Directions

  1. Put butter, chopped onion, and garlic in a saucepan on medium heat for about 3 minutes.
  2. Add chopped broccoli stalks and seasoning to the saucepan and cover. Cook until onion is soft and translucent.
  3. Add stock and simmer, covered, for about 10 minutes, or until the broccoli is soft enough to puree easily.
  4. Cool and then puree the contents of the saucepan.
  5. Return puree to the saucepan and then add the milks and creme.
  6. I regularly substitute the broccoli stalks for myriad veggies, and it just always turns out (I think I'd skip trying something like iceberg lettuce, but, weirdly, even tomatoes worked!). This is a great way to use up the contents of your crisper, from time to time. Freezes well
