Ingredients ( 2 to 3 )
- 1 or 2 pats butter
- 1 medium onion, chopped (I prefer white, but I have tried all kinds, and they've all worked well.)
- 2 cloves garlic, smashed
- 2 or 3 broccoli stalks, chopped
- 1 to 2 tablespoons of your favorite curry powder mix
or
1 tablespoon turmeric
1 teaspoon coriander
1 cumin
- 1 to 2 cups stock of your choice (I prefer chicken.)
- 1/4 cup coconut milk
- 1/4 cup creme fraiche
- 1/4 cup milk (I prefer skim.)
Directions
-
Put butter, chopped onion, and garlic in a saucepan on medium heat for about 3 minutes.
-
Add chopped broccoli stalks and seasoning to the saucepan and cover. Cook until onion is soft and translucent.
-
Add stock and simmer, covered, for about 10 minutes, or until the broccoli is soft enough to puree easily.
-
Cool and then puree the contents of the saucepan.
-
Return puree to the saucepan and then add the milks and creme.
-
I regularly substitute the broccoli stalks for myriad veggies, and it just always turns out (I think I'd skip trying something like iceberg lettuce, but, weirdly, even tomatoes worked!). This is a great way to use up the contents of your crisper, from time to time. Freezes well
