Southwestern Veggie & Avocado Soup

This is SO easy, filling, beyond tasty, and SUPER healthy!

Ingredients ( 2 )
- 1 can of Progresso Light Southwestern Vegetabe soup
- 1 pre packaged cup Minute instant brown microwaveable rice
- 1 lime
- 1 medium ripe avocado
- Soup already has black beans and corn, but if you want more, 1 can of black beans and 1 package frozen corn
Directions

Heat soup in pot on stove.
Microwave rice (per instructions) and add to soup. If desired, add more beans and corn.

Cook until hot.

Dice avocado and add to soup when ready to serve. Cut lime in 1/2 and juice 1/2 over each bowl just before serving. I like to juice it with a spoon or hand held juicer to get some of the fruit itself in the soup for extra flavor.
